While probably not a popular VDF choice, the Tama kit is probably your best bet for flexibility.
As for double pedal vs double bass drum; it simply depends on what you are trying to accomplish. If you have guys getting up to play a couple if songs or even 30 min, then taking out the time to set-up a double bass kit won't really be an option. If one band comes in, sound checks in the afternoon and then plays that night, then sure, they can play double bass, but I doubt that is what is happening at your venue.
To be fair, most of the pros are using double pedals these days with the general exception of the metal core, speed metal, death metal, progressive rock, etc. Plus, if you are mic'ing the kit that is one or two more inputs to deal with. Your engineer probably would not have accounted for that so he either has to move the entire mix down the board (a nightmare if you don't have digital desks) or he has kick drums on inputs 1, 2, 45, and 46. Of course, if you are not mic'ing then it doesn't matter.
